README: refine "Out of scope" section
Based on user feedback, refine the "Out of scope" section regarding
`docker-compose`:
* Explain why Podman uses Kubernetes YAML.
* Explain how `podman-play-kube` and `podman-generate-kube` fit into the
picture.
